I love Pumpkin Seed Oil. It has a nutty flavor and emphasizes the flavor of many dishes – like salads, soups … This time I used it for cauliflower soup (which is naturally not too rich on flavor) and it was just a perfect match

Rosted Red Bell Pepper & Cauliflower Soup with Pumpkin Seed Oil

  • Olive Oil
  • 1 white Onion
  • 1 Cauliflower Head
  • 2 roasted Red Bell Pepper
  • Vegetable Broth
  • Garlic to taste
  • Turmeric to taste
  • Chili Pepper flakes to taste
  • for Garnishing: fresh Italien Parsley, Pumpkin Seed Oil
  1. First, roast the bell pepper in an oven until SLIGHTLY brown. Meanwhile, heat up the olive oil over medium heat, add chopped onion, roast for approx. 3 minutes. Add vegetable broth, cauliflower florets, turmeric, garlic, chili flakes and bring to boil until the cauliflower is nicely tender. Add the roasted peppers and blend until you get creamy soup :) Serve garnished with fresh Italian parsley and pumpkin seed oil.
