Refreshing Lime Chia Pudding

OK, it’s not Summer, yet. Still, this lime pudding is so good I had to make it now! No matter if it’s freezing & snowing and all the winter things happening



Lime Chia Pudding with Dates & Coconut


… made of just 4 basic ingredients …

Refreshing Lime Chia Pudding
Recipe type: Chia Pudding
  • 1 Lime (juice and zest)
  • 1 cup any plant Milk (or you can just blend water with dried coconut - that work good, too)
  • 1 handful Dates
  • dried Coconut (approx. ½ cup)
  • Chia Seeds (to make the pudding thick enough)
  1. First, prepare the lime mixture -> blend the milk with dried coconut (approx. 4 tbsp.) + juice of 1 lime + zest of ½ lime + handful dates (or you can use more dates if you prefer it more sweet than zesty). Taste the mixture before you add chia seeds!! It should have a lime-sweet taste. Finally, add the chia seeds to make it thick enough. Pour into small glasses and let rest in a fridge for at least 3 hours. Serve garnished with chopped dates, lime zest, and dried coconut.
