Soooo Gooood! Cucumber with Sesame Oil & Carrot Pesto and Dried Nori

Ingredients
- for Carrot Pesto:
- 2 large Carrots
- 2 tbsp. Sesame Oil
- 2 tbsp. Sunflower or Raps Oil
- Juice of 1 Lemon
- Salt to taste
- 2 tbsp. Sunflower Seeds
- Cucumber, Sesame Seeds, Dried Nori
Instructions
- For the carrot pesto, put carrots, sesame oil, sunflower oil, lemon, sunflower seeds and salt in a high-speed blender. Blend until smooth. If its not thick enough, add more sunflower seeds.
- Use peeler or spiralizer to peel or spiralize :) the cucumber. Serve with the carrot pesto, garnished with sesame seeds and nori ....
