Red Lentil & Carror & Turmeric Soup

It’s still a bit cold there outside. Which is that kind of weather calling for soups! This might be actually the last one for this season … so hurry up to make it!
Red Lentil & Carror & Turmeric Soup
 
Ingredients
  • 2 tbs. Coconut Oil
  • 1 yellow Onion
  • 4 Garlic cloves
  • 3 Carrots
  • 2 cups Red Lentil
  • 1 Red Bell Pepper
  • 4 cups hot water or vegetable broth
  • spices: Salt, Turmeric, Curry Powder, Hot Paprika or Black Pepper
  • for garnich: fresh Cilantro, Soy Cream
Instructions
  1. In a large pot, heat up the coconut oil and add chopped onion. Roast for a few minutes, add spices and garlic and keep roasting on a low heat (you don't want the spices to get burnt). Add chopped carrots and red bell pepper and red lentil, keep roasting for 5 minutes. Finally, pour in the water (or vegetable broth) and boil until the carrot and lentil are done. Blend with a hand blender until creamy. Adjust the taste by adding more curry or something hot (black pepper or chili). Serve garnished with fresh cilantro and soy cream.
