Sunflower & Raisins & Coconut RAW ball

It’s been a while since I made a RAW sweet thing. And now I am making a promise to make one at least once a week. It is one of the most delicious ways how to eat nuts, seeds and dried fruit at the same time. And this also makes these desserts super healthy as they are packed with vitamins and fiber. For these moist balls, I used sunflower seeds (vitamin E, magnesium, selenium) + dried raisins (vitamin K, vitamin C, vitamin E, vitamin B, calcium, iron, manganese, zinc) + carrot + lemon + peanut butter. No sugar or syrup added this time. Raisins and dried coconut make a really job on making it sweet.

  • 1 cup sunflower seeds (soaked for at least 2 hours)
  • ⅓ cup raisins
  • 2 tbsp. peanut butter (RAW)
  • 1 carrot
  • juice of ½ lemon
  • 2 tbsp.dried shredded coconut
  • rum :) (optional)
  • pinch of cinnamon (optional)
  • more dried shredded coconut for coating
  1. In a food processor (I used Vitamix) blend together all the ingredients until you get a sticky moist "paste" (be careful not to overheat your blender). Place the "paste" in a bowl and mix with more coconut just to get a good consistency for shaping nice balls. Finally, coat the balls with more coconut.
