Mung Bean Hummus with Seeds and Cilantro

Mung bean hummus is just one of many many alternatives to basic chickpea hummus. The good thing about hummus is, that it always tastes so good. You can always adjust the taste by adding some more spices or herbs (cumin and cilantro). I was very creative with this recipe, as I served mung hummus as a sidedish for cooked mung beans .) Get your blender ready!
Mung Bean Hummus with Seeds and Cilantro
 
Ingredients
  • 2 cups cooked Mung Beans
  • juice of ½ Lemon
  • 4 Garlic cloves
  • 3 tbsp. Tahini
  • Olive Oil
  • ½ tsp. Cumin
  • Salt to taste
  • to serve:
  • fresh Cilantro
  • mix of Seeds (Sesame, Flax, ...)
Instructions
  1. Add all the hummus ingredients in a blender/food processor and blendd until you get the desired consistency. Adjust the taste by adding some more lemon/garlic/salt. Serve sprinkled with seeds and fresh chopped cilantro and drizzled with extra olive oil.
