Goji & Coconut Energy Balls

Goji + Coconut! This Monday needs a real kickstart! Let’s do it with these RAW energy-boosting balls.

Ingredients
  • 1 cup of your favorite nuts + seeds (I used ½ cup cashews + ½ cup sunflower seeds)
  • ½ cup shredded coconut (unsweetend)
  • 2 tablespoons goji
  • ½ - 1 cup of dates
  • 1-2 tablespoons coconut oil
  • pinch of salt
  • drop of vanilla (or rum :) extract ... this is optional
Instructions
  1. First add the cashew + sunflower seeds + coconut in a blender (or chopper) and pulse until you get
  2. crumbles. Add all the remaining ingredients and blend until you can compact, still crunchy batter to form small balls. Finally, roll the balls in shredded coconut just to make them look more fancy :) Let them chill in a fridge before serving.
