Scrambled Tofu with Okra and Bell pepper

Are you missing scrambled eggs for breakfast? I hope you are because I’ve prepared very special scrambled tofu .) Even better alternative for scrambled eggs.
Scrambled Tofu with Okra and bell pepper
Recipe type: tofu
  • 1 - 2 tbsp.Coconut oil
  • 1 spring onion
  • 1 package extra Firm Tofu (cubed and drained removed from the exceed water)
  • 1 yellow Bell Pepper
  • 2 cups Okra (either fresh or frozen)
  • 3 cloves Garlic
  • 1 tsp. Cumin
  • 1 tsp. Paprika powder
  • 1 tsp. Turmeric
  • Salt
  • Sriracha
  1. In an iron pan heat up the coconut oil, add diced onion and sliced garlic. Cook for approx. 4 minutes. Add sliced yellow bell pepper and spices (cumin, turmeric, paprika powder) and cook, stirring occasionally for approx. 3 minutes. Add tofu and cook for 3 more minutes until it gets slightly golden. Finally add cut okra and whole snap peas, add some water is needed and cook until you get scrambled tofu - for about 3 more minutes. Serve sprinkled with fresh cilantro and a hint of sriracha.
