Oh No – just don’t get confused by the name … BuckWHEAT is still gluten-free! Technically, buckwheat seeds are the fruit of a plant called Fagopyrum esculentum. And more that that – it’s also nicely smooth and kind of crunchy at the same time.
- 2 cups Buckwheat Groats
- a bunch of Fresh Spinach
- 1 large red onion
- 1 tablespoon RAW sugar
- Cook the buckwheat according to instruction (it needs about 15 minutes to boil). Meanwhile prepare the caramelized onion: Heat the olive oil over medium heat, add chopped onion and cook for about 15 minutes till the onion starts getting brown-golden. Finally add one spoon RAW suggest to get the onion caramelized. When the buckwheat is cooked, stir in the fresh spinach. Serve sprinkled with caramelized onion.
