As every child, I used to be addictive to those Snickers, Mars, Twix bars … no apology – I was just a kid .)) One of the best things about RAW food is that it always finds an even more delicious alternative to those “traditional” sweets. What a nice surprise when I discovered RAW vegan caramel – made just of water and dates. Or RAW vegan chocolate – made of melted coconut oil, cacao powder and agave. Very basic simple things – let’s combine them together:
Caramel – in a blender combine 1 cup medjool dates with approx. 1 cup water (add the water gradually, just the consistency to be enough thick) and a pinch of salt. To make the caramel a bit richer, you may add some peanut butter (recommended)
Chocolate -stir together approx. 1/2 cup coconut oil (melted) + 1/4 RAW cocoa powder + 2 teaspoons RAW agave (or a few drops of stevia sweetener), pinch of sea salt
Using small paper cups, first place 1 teaspoon caramel and cover it with 1 teaspoon melted chocolate. Place in a fridge for at least 1 hour before served.
