Roasted Zucchini Hummus with Almonds
Recipe type: Hummus
  • 3 Zucchini
  • 2 cans Chickpea (rinsed and drained)
  • 3 Garlic cloves
  • Juice of 1 Lemon
  • 1 tablespoon Tahini
  • Olive Oil
  • Salt
  • Almonds (Optional)
  1. First cut the zucchini into cubes and toss lightly with olive oil and salt. Roast in the preheated oven for about 20 minutes until slightly brown/golden. Meanwhile heat up the chickpea and place it with all the other ingredients (lemon juice, garlic, tahini, salt, olive oil) in the blender, add the roasted zucchini and keep blending until desired texture. Serve sprinkled with chopped almond
