  • 1 can Chickpeas
  • 2 garlic cloves
  • Juice of ½ lemon
  • 1 tablespoon Tahini
  • Salt
  • 1 small eggplant
  • 1 tablespoon olive oil
  1. Preheat the oven to 430 degrees. Cut the eggplant into slices (with skin) and roast in the oven for about 25 minutes until nicely tender. To prepare the traditional hummus, blend the rest of ingredients (chickpea, garlic, olive oil, lemon juice, tahini, salt) in a blender. And now, finally, add the roasted eggplant in the blender and repeat blending for a while.
