Leek + Potato + Kari Soup

I named this soup “cold outside & warm inside”. It always warm us up in the chilly gloomy days. As always, it’s very simple and quick. Feel free to experiment with roasted spices – kari, turmeric, red pepper, garam masala. This soup is really open to everything.

  • 1 onion (diced)
  • 2 potatoes (cubes)
  • 4 carrots (diced)
  • 1 leek (sliced)
  • handful mushrooms (sliced)
  • salt,
  • pepper
  • red pepper
  • kari
  • turmeric
  • olive oil / or sunflower oil
  1. Place a large pan on a high heat and add 2 tablespoons of olive oil. Add the onion and roast for about 7 minutes, add the spices and roast on medium heat. Add carrots, leeks, potatoes and some vegetable stock and cook until the vegetable gets soften. Add the mushrooms and cook for a while.
  2. When serving, sprinkle wit fresh italian parsley.
