Pesto, what a lovely invention! It’s also one of the basic things I would never ever buy in a store. The thing I love about it most is the taste of FRESH lemon and herbs. And this only happens when you make it from scratch. You can easily adjust the taste by adding more lemon, garlic, peanuts … just as you like.
To keep the basic pesto vegan I don’t use any cheese. Yet the taste is perfect and it’s also the version of making pesto.
- 1 handful of spinach
- 1 handful of basil
- approx. 3 table spoons of olive oil
- skin of 1 lemon
- lemon juice
- 3 garlic cloves
- 1 handful cashews or walnuts or any walnuts :)
- With this recipe I must admit I am not a fan of measuring. With pesto it's always about putting all the ingredients into a food processor and blending it and adding either more garlic or more lemon --- just it to be perfect for you!
